Our Dad has a degree in Spanish; so during the course of his studies, we started celebrating holidays of Spanish speaking nations. Today is Cinco de Mayo. So today we are looking forward to roasted pork carnitas, fresh tortillas, refried beans, rice and cheese. In fact our Mom is cooking that meal for 40 people at the Ruritan Club tonight. We'll be taste testing it for her today as she cooks - our mouths are watering just thinking of that delicious pork. We're off to practice our best "Scottie Stand" - Mom is always a sucker for that!!
